2 eggs
50 g whole wheat flour
50 ml milk (dairy or plant-based)
1 teaspoon baking powder
50 g fresh blueberries
50 g strawberries (sliced)
1 teaspoon honey or maple syrup
1 teaspoon coconut oil or butter (for cooking)
Directions
Prepare the batter: In a bowl, whisk the eggs and add whole wheat flour, milk, and baking powder. Mix until smooth.
Add the blueberries: Gently fold in the fresh blueberries.
Cook the pancakes: Heat a non-stick pan with a little coconut oil or butter. Pour a ladle of batter into the pan and cook over medium heat until bubbles form on the surface. Flip and cook for another 1-2 minutes. Repeat until the batter is finished.
Plate and garnish: Arrange the pancakes on a plate, top with sliced fresh strawberries, and drizzle with honey.
Serve and enjoy: Your protein pancakes are ready to be enjoyed warm.
