  1. Fresh eggs

  2. Ripe papaya

  3. Avocado

  4. Grated Parmigiano Reggiano

  5. Freshly ground black pepper

  6. Butter

  7. Salt

Directions

  1. Preparation of the ingredients: Peel the papaya and cut it into small cubes. Peel the avocado and cut it into slices or cubes. Set aside.

  2. Preparation of the omelette: In a bowl, beat the eggs with a fork. Add a pinch of salt, black pepper, and a handful of grated Parmigiano Reggiano.

  3. Cooking: Heat a non-stick pan with butter. Pour the egg mixture into the pan and spread it evenly.

  4. Adding the papaya: When the omelette begins to set, add the papaya cubes to one half of the omelette.

  5. Folding and finishing: Fold the omelette in half and cook it for another minute, until golden on the outside and cooked through on the inside.
