2 slices of multigrain bread (or another choice, such as whole wheat bread or focaccia)
2 eggs
fresh spinach
cherry tomatoes (red or yellow, halved)
1 tablespoon extra virgin olive oil
salt and pepper to taste
spices of choice (such as paprika or oregano)
Directions
prepare the spinach and tomatoes: wash the fresh spinach and cherry tomatoes. place the spinach as a base on a plate and cut the cherry tomatoes in half, arranging them on top of the spinach.
cook the eggs: in a non-stick pan, heat a tablespoon of extra virgin olive oil. crack the eggs into the pan and cook over medium heat until the desired consistency is reached (fried or scrambled eggs). add salt, pepper, and spices of choice.
toast the bread: place the multigrain bread in a toaster or on a pan to make it slightly crispy.
assemble the plate: place the bread slices next to the spinach and tomatoes, adding the eggs on top of the bread or serving them on the side.
serve and enjoy: serve the dish warm and fresh, perfect for a quick and complete meal.
