Avo&Lemon Beef Tartare

High-quality fresh veal (minced or chopped with a knife)
Carrots
Chopped or sliced almonds
Fresh lemon juice
Ripe avocado
Rice cakes
Balsamic vinegar
Extra virgin olive oil
Salt and pepper to taste
Directions
Preparation of the meat: Make sure the veal is fresh and of high quality. Finely chop it with a knife or roughly mince it. Season with fresh lemon juice, a drizzle of extra virgin olive oil, salt, and pepper. Let it rest for a few minutes.
Preparation of the ingredients:
Cut the carrots into julienne and lightly toast them in a pan if you prefer a sweeter flavor.
Peel the avocado and cut it into small cubes or mash it slightly with a fork to create a creamy texture.
Toast the almonds in a pan for a more intense flavor.
Assembly:
Place a rice cake in the center of the plate as a base.
Add a layer of veal tartare, then top with the julienned carrots and avocado.
Finish with the toasted almonds and a drizzle of balsamic vinegar for decoration.
