  4. Fresh lemon juice

  5. Ripe avocado

  6. Rice cakes

  7. Balsamic vinegar

  8. Extra virgin olive oil

  9. Salt and pepper to taste

Directions

Preparation of the meat: Make sure the veal is fresh and of high quality. Finely chop it with a knife or roughly mince it. Season with fresh lemon juice, a drizzle of extra virgin olive oil, salt, and pepper. Let it rest for a few minutes.

Preparation of the ingredients:

  1. Cut the carrots into julienne and lightly toast them in a pan if you prefer a sweeter flavor.

  2. Peel the avocado and cut it into small cubes or mash it slightly with a fork to create a creamy texture.

  3. Toast the almonds in a pan for a more intense flavor.

Assembly:

  1. Place a rice cake in the center of the plate as a base.

  2. Add a layer of veal tartare, then top with the julienned carrots and avocado.

  3. Finish with the toasted almonds and a drizzle of balsamic vinegar for decoration.
