Avo Halloumi Toast

Whole grain bread (or your choice of bread)
Avocado
Halloumi cheese, sliced
Eggs
Butter (for cooking eggs)
Salt and pepper to taste
Olive oil (for grilling the bread and Halloumi)
Directions
Toast the bread until golden brown.
Grill the Halloumi slices in a pan with a little olive oil until golden and crispy on both sides.
Mash the avocado and spread it generously on the toasted bread.
Scramble the eggs in a pan with a little butter. Season with salt and pepper.
Assemble the toast: Place the grilled Halloumi slices on top of the mashed avocado.
Serve the scrambled eggs on the side or on top of the toast, as you prefer.
