Tuna Truffle Omelette

Ingredienti
Omelette:
3 large eggs
1 tsp truffle oil (or fresh black truffle shavings)
1 tsp grated Parmesan cheese (optional)
Salt and pepper to taste
1 tsp extra virgin olive oil (for cooking)
Fresh parsley, chopped (optional)
Side:
80 g canned tuna in water, drained
Asparagus
A dash of lemon juice and olive oil (optional)
Indicazioni
Prepare the asparagus:
Wash and trim the asparagus. Cut into 3–4 cm pieces. Blanch them for 2–3 minutes in boiling salted water or sauté in a pan with a bit of olive oil until just tender. Set aside.Prepare the tuna side: Season with a little lemon juice and olive oil if desired. Set aside.
Beat the eggs with salt, pepper, and Parmesan (optional) in a bowl.
Heat the olive oil in a non-stick pan over medium heat.
Pour in the egg mixture and let cook for 2–3 minutes, until the bottom is set.
Fold the omelette gently in half and cook another minute.
Plate the omelette, then drizzle with truffle oil or top with truffle shavings. Garnish with parsley if using.
Serve hot with the tuna on the side.
