Protein Cottage Cheese Pancakes

Ingredienti
1 ripe banana (about 100 g)
100 g low-fat cottage cheese
2 whole eggs
30 g rolled oats
1 tsp baking powder
Blueberries and strawberries
Greek Yogurt(optional)
A pinch of salt
Indicazioni
In a bowl, mash the banana with a fork until smooth.
Add the cottage cheese and eggs, and mix well until fully combined.
Stir in the oats, baking powder, salt, and cinnamon (if using).
Gently fold in the chopped strawberries and blueberries.
Heat a non-stick pan over medium-low heat. Lightly grease if needed.
Spoon the batter onto the pan to form small pancakes.
Cook for 2–3 minutes per side, until golden brown and set in the center.Plate the pancakes and top with Greek yogurt, extra berries, and a drizzle of honey or maple syrup for sweetness.
